While we love celebrating the versatile ingredient in all its forms, a fresh salad has to be one of our favorite ways to enjoy sweet summer corn. Not only is it completely adaptable to what you have on hand, it’s so easy to prepare—simply toss to combine, season to taste, and serve!

4 c. fresh or frozen corn, rinsed and drained if frozen, and steamed, boiled, or grilled if fresh
1 c. cherry tomatoes, halved
1/3 c. crumbled feta
1/4 red onion, finely chopped
1/4 c. fresh basil, thinly sliced
3 tbsp. extra-virgin olive oil
Juice of 1 lime
Kosher salt
Freshly ground black pepper
