This brightly coloured smoothie is a great way to start the day, and sets you well on the way to getting your five-a-day. Kale adds wonderful vibrancy while coconut and pineapple give this smoothie a deliciously tropical taste.
Ingredients
40g (1 1/2oz) tender-leaf kale
200ml (12fl oz) pineapple juice
125g (4oz) pineapple chunks
1 banana, peeled and sliced
3 tbsp low-fat coconut yogurt
1 tbsp honey or agave syrup
Directions
Put the kale and pineapple juice in a blender and blend until smooth.
Add the remaining ingredients and blitz until really smooth.
Check the consistency - if it’s a little thick, add a splash more pineapple juice or some water and blend again.
TIP: If you can’t find coconut yogurt or you already have plain yogurt in the fridge, mix 2 tablespoons yogurt with 1 tablespoon desiccated coconut instead.
